Tri-Color Dose | Independence Day Special



Tri-Color Dosa  | Independence day special Recipe




















Ingredient:
For dosa batter
2 cup rice
½ cup urad dal
½ cup cooked rice
1 tbsp chana dal
½ tsp fenugreek


For tri-color dosa
2 bowl dosa batter
Carrot puree
Spinach puree
Food color if require (green and orange)
Oil




Method;
1.Soak, both urad dal and rice separately for 4-5 hour. Soak the urad dal ,chana dal and fenugreek seeds together.
2. Drain the urad dal and rice ,but don’t throw away the water .reserve the water.
3.In a wet grinder or mixer grinder ,add urad dal and 1-2 tbsp of reserve water And Grind urad dal.
Keep adding 1-2 tsp of water in between grinding. The batter should be light and fluffy when completely ground.
4. pour the urad dal batter in a deep pan or bowl.
5. Grind rice and boiled rice/ poha . the rice should  be completely ground .  you can feel the batter with your finger tips, the batter should not feel grainly.it should be smooth and paste like. I use 2 ½  cup of water to grind dal and rice.
6.Add rice batter to the urad dal batter and mix well.
7.Add salt and some water if necessary and mix well.
8 Cover bowl and container with a lid  and keep the batter in a warm place. It should be left  for 10-11 hours.Don’t use air tight lid. If you stay in a place where the temperature is cold  ,keep the batter in warm place or left it for 15-16 hour.
9.After fermentation, the dosa batter rise and double in volum.
This is the basic dosa batter.


For dosa.
1.Divide the batter in 3 parts .
2.add carrot puree in one part and spinach puree in another bowl and mix it will.
3.Heat  the non-stick tava.
4.Firstly 2 tbsp orange batter and spread it in circle.
5.Now spread  white batter as show in the photo.
6.At last add the green batter and spread it.
7.Sprinkle 1 tsp oil and cook till crispy texture.
Serve with chutney………………….
